It is a widely known fact that I cannot cook or bake. I mean, I CAN if I absolutely HAVE to, but I’d rather not. I am so fortunate that Rich enjoys being in the kitchen and has a knack for cooking. I am happy to clean up in exchange for a meal!
So once in a blue blue moon, something sparks my interest. Yesterday, I was looking through some new food and fitness blogs and a recipe caught my eye for Apple-Cinnamon Oat Squares. I never venture into complicated recipes. Everything I make is very straight forward and still closely supervised by Rich. Me in the kitchen alone has led to disaster many times.
On to these Apple Cinnamon Oat Squares
2 cups unsweetened almond milk
1 1/2 cups steel cut oats
1/2 cup chopped pecans or walnuts (I used walnuts)
1/2 cup raisins
2 tsp. vanilla extract
1 1/2 tsp. ground cinnamon
2 (about 1 lb.) apples, cored and grated
Preheat the oven to 350
Combine all the listed ingredients
Dry, wet, mix!
Transfer to a lined 9x9 baking dish and press down to smooth out top
Bake at 350 for an hour
Enjoy!

Here is a flashback for Friday for a little chuckle. I am taking major heat for wearing leg warmers with my running tights. In my defense, I have rather long legs and there is a small area of bare skin around my ankle that is exposed while I wear my running tights. I fixed the problem by wearing my H&M leg warmers with them and it kept my ankles nice and toasty! It will be a repeated fashion offence most likely tomorrow when I run.

So I am going to try and start running again soon. I am so scared and really not sure about it all, seems crazy and scary right now! I got a few things I have been reading but my hardest thing is trying to find a decent shoe to start out with. I am thinking Asics, I need a lot of support with bad knees and back!! Let me know what you think! I loved Rebox in high school but I am not sure how they are now?
I think I read they are doing a half marathon in Batavia this summer!
