Sunday Dinner

My friend Stephanie is an amazing cook and baker.  She should look into doing it professionally; she is that good.  She can cook a meal that is 100% nutritious and healthy but tastes like the most indulgent thing you’ve ever put in your mouth!  Here is our Sunday night meal adventure (it is always an adventure when I am in the kitchen):

We started our night by breaking in my Kitchenaid mixer I have had stashed away in our storage.  Now I understand why it was such a crime for me to keep it in it’s box for almost a year and a half!  It is beautiful!  In one night, we used the countertop appliance not only for dessert, but dinner as well.   I assisted Stephanie in preparing the yummiest pumpkin bread I have ever had!  While our bread was baking, Stephanie (I was the hunter-gatherer of ingredients and tools) made black bean burgers that were so easy, I will definitely make these WEEKLY!

After dinner we were talking about how what you put in your body directly affects how you feel and how most ‘ailments’ can be treated by a simple diet change.  There is such a disconnect with our society regarding this subject.  Here is your weekly challenge:  Think of the food you eat this week as fuel.  The higher quality fuel you put in your body, the better your daily performances will be!  I am going to live by my words of wisdom this week.  I will let you know how it goes.
